My Simple Go-To Salmon Dinner

This isn’t a recipe or anything complicated. It’s just a meal that works for me because when I cook I don't like extra prep work.

Some nights I don’t feel like figuring dinner out. I don’t want to experiment. I don’t want 15 ingredients. I just want something balanced that I know will taste good and keep me full.

This is one of those meals.

Air fried salmon, roasted potatoes, frozen broccoli with a little butter, and a quick yogurt sauce on top. That’s it.

What I Did

  1. Salmon - I seasoned the salmon with salt, pepper and garlic. Then I air fried at 390° for about 12 minutes, skin side down. It was a tail piece so one side was thinner than the other, but it still cooked fine.

  2. Potatoes - For the potatoes, I cut them up, tossed them in olive oil, salt, garlic powder, and paprika, and roasted them at 425° for about 25–30 minutes, flipping halfway.

  3. Brocolli - The broccoli was frozen. I boiled it for about 7 minutes, added butter, salt, and pepper, and called it a day.

  4. Greek Yogurt Sauce - The sauce was just Greek yogurt, lemon juice, garlic powder, and salt. It takes two minutes and adds moisture to the plate.

Why I Keep Coming Back to This Meal

It’s simple.
It’s filling.
And I usually already have everything I need.

I’m trying to build meals I can repeat without getting tired of them. This is one of them. Nothing fancy, just something that works on a random weeknight when I don’t want to think too hard.
